Doorly's XO Fine Old Barbados Rum
Doorly's XO is the house's premium rum and is a blend of 6 to 12-year-old Barbados rum, with the aging process finished in Oloroso casks. The distillery "The Foursquare Plantation," where Doorly's XO is blended and aged, is approximately 350 years old, and the oldest records suggest that the special rum-wine mill associated with the molasses factory has been in production since 1730. The distillery was completely renovated in 1995 and today presents itself as a blend of history and new technology. At the same time, the rum production on site has been declared 100% environmentally friendly.
Nose: Rubber, sherry cask, spice - and if you sniff hard, it could fool you into thinking it's a sherry-aged whisky. Taste: Full-bodied rum and sherry notes, very complex, vanilla and nuts. Aftertaste: Oily, long and sweet, traces of sherry. A very fine balance in the aftertaste. Doorly's XO Fine Old Rum is a very balanced rum, and the sherry inspiration makes it distinctive and exciting.
