The cherries are wild-fermented with both skins and stones for 2-4 days to ensure a more complex and deep flavour. The cherries are then pressed and finish fermenting in steel tanks, all to preserve as much of the fruit flavour as possible. Frederiksdal Vintage Cherry Wine's fine acidity and relatively low alcohol make it ideal for Christmas rice pudding, strong cheeses such as firm sheep's and cow's milk cheeses, and desserts with berries.
