El Dorado 2000 The Last Casks Gold Label is a limited edition rum from Demerara Distillers Ltd in Guyana. El Dorado has long been recognised as one of the Caribbean's leading rum brands, as the distillery - Diamond Distillery - owns some of the oldest and most remarkable stills in the world of rum, and these are used in various ways for the production of El Dorado rum.
The unique El Dorado 2000 The Last Casks Gold Label Edition rum is based on a 1-year-old rum that was distilled on the Diamond Coffey Still. This rum was then aged for an additional 21 years in used casks that previously contained rum from Uitvlugt Distillery, which closed in 2000. The total of 22 years of ageing took place in ex-bourbon oak casks.
The aroma features honey, caramel, vanilla, cinnamon, nutmeg, liquorice, walnuts, and hazelnuts. The taste is sweet and offers notes of rich molasses, honey, caramel, vanilla, and nutmeg, along with a long, lingering finish.
